Cooking Instructions
Bake pastry shell according to package directions. Be sure to use parchment or tin foil weighed down with pie weights, beans, or rice to keep it from puffing.
Place tomatoes in the crust in concentric circles. Bonus points for slicing the tomatoes and laying on paper towels for a while to soak up some moisture - it's worth the extra step! Sprinkle with bacon. In a small bowl, combine the cheese, mayonnaise, basil, black pepper and green onions. Spoon over bacon in the center of pie, leaving 1 inch around edge.
Bake at 350 degrees for 30-40 minutes or until golden brown (cover edges with foil if necessary to prevent overbrowning). Let cool for at least 15 minutes before cutting!
Serve warm or at room temperature - perfect for a brunch buffet or a midnight snack!
